This bright and colorful cake is called “quick” because for its preparation you do not need to knead the dough or heat the oven. But it is worth paying attention to the fact that the jelly takes time to harden.
Such cakes, as a work of art, are often associated with mosaic or stained glass – a white dense base of the cake interspersed with large colored “shards” of multi-colored jelly.
Ingredients:
Cream filling:
- sour cream – 400 g
- condensed milk – 300 g
- gelatin 25 g + water 150 ml
- three packs of jelly of different flavors (any according to your taste)
- boiling water
Cake base:
- fried sugar cookies or sweet crackers – 350-400 g

“Broken glass” – a recipe for jelly with sour cream. Cover cooking:
- Prepare the jelly as written on the back of the package. In the standard version of preparation, you need to pour the contents of one packet of jelly into 400 ml of boiling water, stir until dissolved.
- Pour the jelly into molds where it will be convenient to cut it into cubes.
- Put in the refrigerator until completely solidified.
- In a separate container, mix the gelatin with water, leave this mixture for 10-15 minutes, allowing the gelatin to “swell”. Then this mixture should be heated (do not boil) in a microwave oven or in a water bath until the gelatin is completely dissolved.
- Mix sour cream, condensed milk and dissolved gelatin in a large container.
- We wrap the bottom of the detachable baking dish with polyethylene film and lay out cookies or crackers in 1-2 layers.
- Pour the cream on the cookies.
- We take out the frozen jelly from the refrigerator, cut it into cubes and transfer it in a random order to the sour cream cream.
- We cover our cake with food storage film and put it in the refrigerator for 2-2.5 hours until the dessert hardens completely.
- Take the cake out of the form and you can serve it!
In order to diversify the dessert, you can prepare “Broken glass” with yogurt instead of sour cream.
Thus, your dessert will acquire a new taste, especially if you use not just white yogurt, but with fillers – strawberries, blueberries, chocolate, etc.
“Broken glass” cake with biscuit is a more complex option using the oven
Ingredients:
For the filling, we use the ingredients from the previous recipe.
For the biscuit:
- sugar – 100 g
- vanilla sugar – 10 g
- three chicken eggs
- wheat flour – 65 g
- baking powder – 0.5 tsp.
- butter – 10 g
Step-by-step preparation:
- Prepare the filling as in the previous recipe (stages 1-5).
- We take out the frozen jelly, cut it into cubes and transfer it in random order to the sour cream cream.
- Next, we start preparing the biscuit. Beat the eggs with a mixer, first at a low speed, and then, after the formation of a light white foam, add sugar and vanilla sugar little by little.
- Beat the egg mixture well for about 5-10 minutes, until it triples in volume.
- Then pour flour and baking powder into the beaten eggs through a sieve, mix with a mixer at low speed for 1-2 minutes.
- Put the dough in a greased baking dish, put it in an oven heated to 180 degrees for 30-40 minutes.
- Remove the finished biscuit from the oven and let it cool. Cut the biscuit into cubes.
- We wrap the bottom of the removable form with polyethylene film, lay out the biscuit, then pour the jelly cream on top.
- Cover the cake with cling film and put it in the refrigerator for 2-2.5 hours, until the dessert is completely frozen.
Another cooking alternative is the “Broken Glass” cake with bananas
Ingredients:
- cream – 500 ml
- two bananas
- sugar – 100 g
- jelly – 3 pieces
- gelatin 25 g + water 150 ml
Cover cooking:
- Prepare the jelly as written on the back of the package and put it in the refrigerator.
- We mix gelatin with water for “swelling” and heat the mixture as described in the first recipe (stage 4).
- Beat sour cream with sugar with a mixer for up to 5 minutes. Pour in the dissolved gelatin.
- Cut bananas into slices.
- Cover a deep semi-circular shape with cling film, place sliced ββbananas on the bottom and sides. Carefully pour sour cream on top, add diced jelly.
- We put the dessert in the refrigerator to harden.
- Carefully turn the finished completely frozen cake onto a plate and remove the film.
